Veg Kofta Curry

 

(Fried vegetable koftas in yellow Indian gravy ).

Sometimes we open the fridge and find many vegetables there. We try to find a recipe which can incorporate most of these veggies and be a family- favourite too! Ingredients

For making koftas -

  • 1 cup cabbage leaves finely chopped (पत्तागोभी)

  • 1 cup carrots grated (गाजर)

  • 3 mashed boiled potatoes (मसले हुए उबले आलू)

  • 1 tbsp coriander leaves (धनिये के पत्ते)

  • 1/2 cup chickpea flour (बेसन)

  • 3 tbsp cornflour (कॉर्न फ्लोर)

  • 1 tbsp ginger-garlic-green chilli paste (अदरक-लहसुन-हरी मिर्च का पेस्ट)

  • 1 tbsp cumin powder (जीरा पाउडर)

  • 1 tsp kasuri methi crushed (कसूरी मेथी)

  • oil for frying (तलने के लिए तेल)

    For making the masala paste -

  • 2 tbsp dry grated coconut (सूखा कसा हुआ नारियल)

  • 7-8 cashews (काजू)

  • 1 tbsp sesame seeds (तिल)

  • 1 tomato (टमाटर)

  • 1/4 cup fried onion (तला हुआ प्याज)

    For making the curry -

  • 1 tbsp oil (तेल)

  • 2 bay leaves (तेज पत्ता)

  • 1 cinnamon stick (दालचीनी)

  • 1 tbsp ginger-garlic-green chilli paste (अदरक-लहसुन-हरी मिर्च का पेस्ट)

  • 1 cup water (पानी)

  • 1 tsp turmeric powder (हल्दी पाउडर)

  • 1 tsp red chilli powder (लाल मिर्च पाउडर)

  • 1tsp dry mango powder (अमचूर)

  • 1tsp garam masala (गरम मसाला)

  • 1/2 tsp chaat masala (चाट मसाला)

  • salt as per taste (नमक)

  • 2 tbsp tomato ketchup (टमाटर केचप)

  • 1 tsp sugar (शक्कर)

  • 1 tbsp coriander leaves chopped (धनिये के पत्ते)

    Method

Making koftas -

  • Mix all the ingredients for koftas in a deep dish/plate. Add very little water and make a thick dough.

  • Make vertical balls from the dough as shown in the video above.

  • Roll them in cornflour powder and deep fry them (on medium flame) to make koftas.

  • Remove the koftas on a kitchen paper towel to remove excess oil from them.

Making the masala paste -

  • In a grinder jar, put all the ingredients needed to make the paste. Add very little water.

  • Grind the contents to make a smooth paste. Set aside.

Making the curry -

  • Heat oil in a kadhai/pan.

  • Once the oil becomes hot, add cumin seeds, bay leaves, cinnamon stick, ginger-garlic-green chilli paste, and saute for 20-30 seconds.

  • Add the masala paste and a little water to the pan.

  • Add turmeric powder, red chilli powder, amchur, garam masala, chaat masala, and fry till oil separates from the mixture. Keep stirring continuously as the mixture tends to stick to the bottom of the pan.

  • Add water, salt, sugar, and tomato ketchup. Give it a nice stir.

  • Tip in the koftas and mix everything well.

  • Garnish with coriander leaves.

VEGETABLE KOFTA CURRY IS READY TO SERVE!!

SERVE HOT.

Notes -

  • Put the koftas in the curry just before serving this dish. If the koftas remain in the gravy for long, they tend to become soggy. You can still consume the curry. You just have to make do with little soggy koftas ( I don’t mind having those too!)

  • You can serve this curry with roti, naan, kulcha or chapati.

  • You can eat just the koftas with tomato ketchup too. They can be eaten as appetizers.

  • Fry the koftas on medium flame to ensure that they are cooked inside-out.
