Pav Bhaji Khichadi
(Pav-bhaji flavoured rice and moong dal khichadi)

Ingredients
1/2 cup split Yellow Lentils/ Moong Dal (मूंग दाल)
1/2 cup rice (चावल)
6-7 cauliflower florets (फूल गोभी)
2-3 small potatoes (आलू)
4 tbsp cup green peas (हरे मटर)
2 tbsp oil (तेल)
1.5 tsp turmeric powder (हल्दी पाउडर)
1 tbsp ginger-garlic paste (अदरक-लहसुन की पेस्ट)
1 medium onion (प्याज )
1 medium tomato (टमाटर)
1 tsp red chilli powder (लाल मिर्च पाउडर)
1 tbsp pav bhaji masala (पाव भाजी मसाला)
1/2 tbsp garam masala (गरम मसाला)
salt as per taste (नमक स्वादानुसार)
1/2 tbsp coriander leaves (धनिए के पत्ते)
1 tbsp lemon juice (नींबू का रस)
1/2 tbsp butter (बटर)
Method
Wash the moong dal and rice 2-3 times with water. Add 2 cups of water, a little oil and a pinch of turmeric powder to it and set it aside.
In another vessel, add the cauliflower florets, green peas, and potatoes. Add a little water to the vessel.
Transfer both the vessels to a pressure cooker and pressure cook (2 whistles).
Gently mash the cooked dal-rice mixture.
Peel the potatoes and mash the veggies too.
In a kadhai/pan, heat oil. When the oil heats up add ginger-garlic paste and sauté for 1-2 minutes.
Add onion and cook till they turn golden brown.
Add the tomatoes, turmeric powder, red chilli powder, pav bhaji masala, and garam masala. Sauté till the oil separates from the mixture.
Add the mashed veggies, cooked rice and lentils, salt, and a little water. Mix everything well.
Add coriander leaves, lemon juice, and a dash of butter. Give it a nice stir.
PAV BHAJI KHICHADI IS READY TO BE SERVED!SERVE HOT.
Notes -
1 cup uncooked rice and dal make almost 3 cups of khichadi. Use rice and dal according to your needs.
You can cook the veggies in a steamer instead of pressure cooking them.
If you add more butter to this recipe, it tastes better! However, if you want a healthier recipe, go easy on butter. If you are a vegan, use vegan butter.
