Poha / Pohe
(A breakfast/mid-afternoon snack dish made from flattened rice).
Poha /Pohe means flattened rice flakes. There are two varieties of poha - thick and thin. This dish is usually made by tempering the thick variety of poha with spices and onions/potatoes. Pohe can be made in many different ways. In this post, I share the recipe for making poha with onions and tomato. You can skip the tomatoes to make authentic ‘Kande Pohe’.
Poha is a traditional breakfast dish made almost all over India. The poha recipe of every region differs slightly. The Maharashtrian pohe is different from the Indori poha! However, the basic recipe is the same. Poha can be topped with toppings like pomegranate arils, sev, grated coconut, etc. This recipe is a great breakfast option and can be eaten as a mid-afternoon snack too.

Ingredients
For making poha -
3 cups thick poha (मोटा पोहा / जाड पोहे)
2 tbsp oil (तेल)
1 tsp mustard seeds (राई / मोहरी)
1 tsp cumin seeds (जीरा / जिरे)
1 green chilli chopped (हरी मिर्च / हिरवी मिरची)
1 onion chopped (प्याज / कांदा)
2 tbsp peanuts (सिंगदाना / शेंगदाणे)
10-12 curry leaves (करी पत्तियां / कढीपत्ता)
1 tomato ( टमाटर / टोमॅटो)
1/2 tsp turmeric powder (हल्दी पाउडर/हळद)
1 tsp red chilli powder (लाल मिर्च पाउडर/ तिखट)
1/2 tsp sugar (चीनी / साखर)
salt as per taste (नमक / मीठ)
1 tbsp lemon juice (नींबू का रस / लिंबाचा रस)
For the garnish -
coriander leaves chopped (धनिए के पत्ते / कोथिंबीर)
sev / bhujia (सेव / शेव)
pomegranate arils (अनार दाना / डाळिंबाचे दाणे)
Method
Add poha to a big strainer and rinse it under water until all poha is wet. Drain all the water and set the poha aside.
Add oil in a heavy bottom pan and heat it.
When the oil gets hot enough, add mustard seeds and let them crackle. Add cumin seeds and onion. Saute till the onions are slightly cooked.
Add peanuts, curry leaves, chopped green chilli. Fry on a low flame till peanuts change colour.
Add the tomato, turmeric powder, red chilli powder, salt and sugar. Sauté for a minute.
Add the poha and mix well. Cook the poha for about 2-3 minutes.
Turn off the heat and add lemon juice and coriander leaves. Mix well.
Garnish with some more coriander leaves, pomegranate arils, and sev.
POHA/POHE ARE READY TO SERVE !!
SERVE HOT.
Notes -
When you wet the poha on the strainer, they should turn soft. To know if poha is ready, press a poha flake between your fingers. If the flake breaks easily, poha are soft and ready to be used.
If you feel poha are a little dry while cooking, sprinkle some water on them and cook for a minute.
Don’t soak the poha in water, or else they will turn soggy.
You can use potatoes, cauliflower and peas while making poha.
We add the salt-sugar to the onion-tomato mixture before adding the soaked poha so it gets evenly distributed.
