Sevaiyan / Sevai Kheer
(Sweet Indian vermicelli pudding)

Ingredients
For the Kheer -
1 cup vermicelli (सेवई)
1 litre boiled full-cream milk (फुल क्रीम दूध)
1/2 cup sugar (चीनी)
3 tbsp clarified butter (शुद्ध देसी घी)
1 tsp cardamom powder (इलाइची पाउडर)
For the garnish -
chopped nuts of your choice (आपकी पसंद के डॉयफ्रुइट्स)
dried rose petals (सूखे गुलाब के पत्ते)
Method
Heat clarified butter (sudh -desi ghee) in a pan.
Add chopped nuts of your choice and fry them until they turn golden brown. Remove them from the pan and set them aside.
In the same pan, add raw vermicelli and roast them in the ghee till they change colour. If you are using roasted vermicelli, you don’t need to roast it (see notes below for more info on types of vermicelli).
Add milk and sugar to the pan and mix everything well.
Cook the mixture for 8-10 minutes on low flame, stirring intermittently. In 8-10 minutes, the vermicelli will swell and become soft.
The milk solids will stick to the sides of the pan. Use a spoon to scrape the sides and put these solids back in the Kheer.
Add the fried nuts and cardamom powder to the Kheer and cook for 2-3 minutes.
Garnish it with more nuts and dried rose petals.
SEVAI KHEER IS READY TO BE SERVED !!
SERVE HOT OR COLD.
Notes -
There are two types of vermicelli available in the market as shown below-
You need to roast the raw vermicelli in ghee before using it. If you are using the roasted variety, you can skip this step.
To get a thick, creamy kheer, use full-cream Buffalo milk. You can use cow’s milk too. However, the kheer will be less creamy if you use cow's milk.
If you don’t like the cream/malai, remove the top layer of the malai from the boiled milk before making the kheer.
Kheer can be enjoyed either hot or cold. If you prefer it cold, simply refrigerate it.
You can store this Kheer in the refrigerator for 4-5 days.
