Roasted Baby Potatoes
(Oven-roasted, aromatic, mildly spiced baby potatoes)
It’s no secret that I love potatoes. Oven-roasted baby potatoes are one of the most crave-able sides ever! They get made in less than an hour, are delicious, and complement almost any meal! So, let us get to the recipe!

Ingredients
500g baby potatoes
2 tbsp extra virgin olive oil
1 tsp garlic powder
1 tsp oregano
1/2 tsp rosemary (optional)
1 tbsp lemon juice
salt as per taste
Method
Wash the baby potatoes thoroughly under running tap water. Pat dry. You can keep them unattended (under a ceiling fan) for them to dry completely.
In the meantime, take olive oil in a small container. Add garlic powder, oregano, rosemary, salt, and lemon juice to it. Give it a stir. The dressing is ready.
Cut the baby potatoes into halves.
Pour the dressing over the potatoes and coat them well with it. Mix everything properly with your hands. You can alternatively use a salad/big spoon.
Preheat the oven to 200 °C (392 °F) for 5-10 mins.
Put a baking sheet on a baking tray. Arrange the baby potatoes on the tray keeping the skin side upwards (as shown in the video).
Place the tray in the oven(upper rack) and grill in the oven for 15 mins.
After 15 mins, flip the potatoes using pair of tongs, and again grill them for 10-15 mins. Be careful while doing this as the oven and the tray would be very hot.
Remove them from the oven.
ROASTED BABY POTATOES ARE READY TO BE SERVED!
SERVE HOT.
Notes -
You can use regular potatoes instead of baby potatoes to make this recipe. Cut them into roughly 2-inch chunks and proceed with the recipe given above.
You can add red chili powder/pepper powder/chili flakes to the dressing, to add spice to these roasted potatoes.
If you don’t like to eat the skin of the potatoes, you can peel off the skin and then cut the potatoes.
The key to perfect roasted potatoes is to cut the potatoes in almost equal sizes. This ensures that all the potatoes are evenly cooked.
