Laccha Pyaaz

 

(Onion roundels tossed in Indian spices)

What is one of the best things about road trips in North India? The highway-side DHABAS!! Dhabas are road side restaurants that serve the best food ever! Today we are making Dhaba-style laccha pyaaz, which a common accompaniment to any meal in the dhabas.

Laccha means rings/roundels.The onion is cut into rings when we make laccha pyaaz. This onion salad is spicy, tangy, and zesty. It is extremely easy to make and requires some basic everyday ingredients only. This salad is vegan, keto-friendly, oil-free, and gluten-free. So let us get to the recipe!

Ingredients

  • 2 large onions (बड़े प्याज)

  • ice cold water for dipping the onions (बर्फ वाला पानी)

  • 1 tsp cumin powder (जीरा पाउडर)

  • 1 tsp coriander powder (धनिया पाउडर)

  • 1/2 tbsp chaat masala (चाट मसाला)

  • 1/2 tbsp kashmiri red chilli powder (काश्मिरी लाल मिर्च पाउडर)

  • salt as per taste (नमक स्वादानुसार)

  • 1 tbsp lemon juice (नींबूका रस)

  • coriander leaves chopped (धनिया के पत्ते)

Method

  • Cut onion into 1/2 cm thick rings (Kindly see the recipe video above).

  • Immerse them in ice-cold water for 8-10 minutes.

  • Remove the rings on a kitchen paper towel and dab a little gently.

  • Transfer the rings to a bowl.

  • Add all the spice powders, salt, lemon juice, and coriander leaves to the onion rings. Toss everything gently.

    LACCHA PYAAZ IS READY TO SERVE !!

    SERVE IMMEDIATELY.

Notes -

  • Soaking onion rings in ice-cold water helps make them crunchy and reduces the pungency of onions. Do NOT skip this step.

  • Chaat masala gives this dish a chatpata (tangy) flavor. Do not skip adding it.

  • Make this salad and serve it immediately if you like it crunchy. The onion rings lose their crunch after some time as they release water. After a while, the rings become a little soft. However, they don’t taste bad when soft. So feel free to eat them a little later too.
