Veg Poha Cutlets
(Shallow-fried cutlets made from beaten rice, semolina and lots of vegetables)
Who doesn’t like cutlets? Everyone does! And if you can make them with all the healthy ingredients, they become even more desirable!
These cutlets combine healthy ingredients—beaten rice, semolina, curd, and many colourful vegetables. They are liked by adults and kids alike. They can be packed in tiffin boxes or used as patties in burgers or sandwiches. So, let us make these yummy cutlets!

Ingredients
1 cup thick/thin variety of poha (जाड़ा / पतला पोहा)
1 cup semolina (सूजी / रवा)
1/2 cup curd (दही)
1 medium onion (प्याज)
1 medium green bell pepper chopped (हरी शिमला मिर्च)
1/4 cup carrots grated (गाजर)
1/2 cup boiled peas (उबले मटर के दाने)
1/2 cup boiled corn kernels (उबले मकई के दाने)
3 tbsp Kashmiri red chilli powder (कश्मीरी लाल मिर्च पाउडर)
1/2 tbsp cumin powder (जीरा पाउडर)
pinch of baking soda (बेकिंग सोडा)
salt as per taste (नमक / मीठ)
2 tbsp coriander leaves chopped (धनिये के पत्ते )
oil for greasing palms and shallow frying (तेल)
Method
Wash the Poha thoroughly and drain all the water from it. The Poha will soak water and become soft. Keep them aside. I have used thick Poha for this recipe.
Take 1 cup Semolina and add curd, soaked Poha, and a little water to a bowl. Mix everything well and let the mixture rest for 10-15 minutes.
In the meantime, chop onion and bell pepper/capsicum finely. Grate the carrot and boil the green peas and corn kernels.
After 15 minutes, add all the masalas, salt, and a little water to the Poha-Sooji mixture. Mix well.
Then incorporate all the vegetables into it.
Add a pinch of baking soda and freshly chopped coriander leaves to the mixture. Mix everything well.
Oil your palms and make cutlets from the mixture.
Shallow fry the cutlets, on both sides, on medium heat.
Remove them on a kitchen paper towel to remove excess oil.
VEG POHA CUTLETS ARE READY TO BE SERVED!!SERVE HOT.
Notes -
You can use thick or thin Poha for this recipe. I prefer to use the thick one.
You can use veggies of your choice in these cutlets.
These cutlets tend to become a little oily. So do not forget to remove them on a kitchen paper towel after shallow-frying them.
The above quantity makes 16-17 medium size cutlets. Adjust the amount of ingredients according to your needs.
