Cream of Palak/Spinach Soup

 

(Cream-based soup made using spinach leaves)

I am a soup person! You can give me a good soup any time of the day and I won’t refuse! I am a big fan of the recipe, I am sharing with you today. Palak soup can be tricky! If not made well, you may end up disliking it big time. However, rest assured… this recipe won’t disappoint you.

Ingredients

  • 1 cup spinach leaves (पालक)

  • 1 tbsp oil (तेल)

  • 1/2 tbsp butter (बटर)

  • 1-inch ginger pieces (1 इंच अदरक)

  • 1 green chilli chopped (हरी मिर्च)

  • 7-8 garlic cloves chopped (लहसुन की कलियां)

  • 1 big onion (बड़ा प्याज)

  • 1 small potato (आलू)

  • 1 celery stick (सेलेरी)

  • 1/2 cup water (पानी)

  • 1/2 cup milk (दूध)

  • 1 tbsp fresh cream (ताज़ा मलाई)

  • 1 tsp black pepper powder (काली मिर्च पाउडर)

  • salt as per taste (नमक स्वादानुसार)

Method

  • Wash the spinach leaves thoroughly to remove all mud from it. Then chop them roughly.

  • Cut the onion, potatoes, green chilli, ginger, garlic cloves, and celery into pieces.

  • Add oil to the cooking vessel and start the flame. Once the oil is heated up add spinach leaves. Saute them on medium flame till they are wilted and cooked. DO NOT COVER THE CONTAINER.

  • Remove the leaves on a plate and set them aside.

  • In the same vessel, add some butter and start heating it. Once the butter melts, add green chillies, ginger, garlic, and onion to it. Saute on a medium flame for 3-4 minutes.

  • Add potato, celery, water, and milk to it. Cover the container and cook on medium flame till the potato is cooked. You can check the potato by inserting a knife/fork in it.

  • Add cooked spinach leaves, salt, and fresh cream to the container.

  • Turn off the heat and let the mixture cool down a bit. Use a hand blender to blend the mixture to a soup consistency. Add water if required. You can alternatively transfer the mixture to a blender jar and blend it using a mixture/food processor.

  • Add freshly ground black pepper powder, and give it a nice stir.


    CREAM OF PALAK/SPINACH SOUP IS READY TO BE SERVED!

    SERVE HOT.

Notes -

  • Be careful while cooking the spinach. The spinach should be cooked but should not lose its colour. If you overcook the spinach it turns yellowish green and we want to avoid that.

  • If you want to make this soup really delicious use more butter and fresh cream. If you want to make it healthier go easy on these two.

  • The amount of spinach should be less than the amount of onion and potato used. Using too much spinach is NOT recommended.
