Bhindi Tomato Sabzi

 

(A simple everyday lady’s finger sabzi )

I eat simple food every day. I believe freshly made, simple, home-cooked meals are the best! I am sharing an everyday sabzi recipe today. This sabzi requires some pretty basic ingredients and gets made in no time.

Ingredients

  • 1/4 kg Okra/ Lady’s finger/ Bhindi (भिंडी)

  • 2 small tomatoes (टमाटर)

  • 2 tbsp oil (तेल)

  • 1 tsp cumin seeds (जीरा)

  • pinch of asafoetida (हींग)

  • 1 tsp turmeric powder ( हल्दी पाउडर)

  • 1/2 tbsp cumin powder (जीरा पाउडर)

  • 1/2 tbsp coriander powder (धनिया पाउडर)

  • 2 tbsp grated dry coconut (सूखा किसा हुआ नारियल)

  • 1/2 tbsp red chilli powder (लाल मिर्च पाउडर)

  • coriander leaves (धनिया के पत्ते)

  • salt as per taste (नमक स्वादानुसार)

Method

  • Wash the bhindis and tomatoes properly.

  • Dry the bhindis completely by air-drying/patting them with a kitchen paper towel/wiping them softly with a kitchen cloth.

  • Remove the corners of the bhindis and cut them into roughly 2-inch-long pieces. Make a slit in the centre as shown in the recipe video.

  • Cut the tomatoes into pieces. Set them aside.

  • In a kadhai, heat 1 tbsp oil. When the oil gets heated, add the bhindis to it. Sprinkle a little salt over them. Fry them in the oil till they are cooked from the inside out.

  • Remove them from the kadhai and set them aside.

  • In the same kadhai, heat a tablespoon of oil again. When the oil gets hot, add cumin seeds, asafoetida, turmeric powder, and cooked bhindis to it. Give it a nice stir.

  • Add cumin and coriander powders, grated coconut, tomatoes, red chilli powder, and salt to it.

  • Cook till the tomatoes are soft.

  • Garnish with freshly chopped coriander leaves.

    BHINDI-TOMATO SABZI IS READY TO BE SERVED!

Notes -

  • You can cut the bhindi and tomatoes in any size. If you choose to cut the bhindis in long pieces, do not forget to make a slit in them. The slit ensures that the bhindis are cooked properly. The slit also helps the bhindis get coated, with the masalas, from inside.

  • If the bhindis are not dry, they will become slimy when cooked. In the Marathi language, this phenomenon is referred to as ‘bhendyana taar sutane (भेंड्यांना तार सुटणे)’. Thus, drying the washed bhindis is an important step!

  • If you want, you can add chaat masala to this sabzi to make it more chatpata.

  • The amount of coconut, and red chilli powder added can be varied according to your preference.
