Singhada Halwa / Singhara Sheera

(A fasting sweet dish made using water chestnut flour)

Singhara atta/water chestnut flour is an excellent source of good carbohydrates, iron, zinc, and many anti-oxidants. It is rich in fibre and thus great for weight loss! Water chestnut/ the Singhara fruit is generally available only in the winter season. However, the flour packets are readily available in grocery stores throughout the year.

My mom has been making this halwa since my childhood, and I remember relishing it every single time! I am so excited to share this lovely fasting recipe with you all! Do make this halwa and let me know how you liked it!

Ingredients

For the Halwa -

  • 1 cup water chestnut flour (सिंघाड़े का आटा)

  • 3/4 cup clarified butter (शुद्ध देसी घी )

  • 1/2 tsp cardamom powder (इलायची पाउडर)

  • Nuts of your choice (ड्राई फ्रूट्स)

For sugar solution (चाशनी) -

  • 2 cups water (पानी)

  • 1 cup sugar (चीनी )

  • 5 tbsp milk optional (दूध )

For garnish -

  • Nuts of your choice (ड्राई फ्रूट्स)

Method

  • Heat the ghee in a heavy bottom pan. Add chopped nuts to it and fry them in the oil till they turn golden brown. Remove these nuts from the ghee and set them aside.

  • Now add the singhara flour to the ghee and roast on LOW FLAME, stirring continuously. Be careful not to burn the flour.

  • Simultaneously, add sugar and a little milk(optional) to 2 cups of water in a saucepan. Start heating this sugar mixture. Stir it till the sugar melts completely. Boil for 2-3 minutes. Then turn off the flame.

  • Keep stirring the flour till you get a nice aroma of roasted flour and the mixture turns dark brown.

  • Add the sugar-water-milk mixture to the roasted flour, stirring properly to avoid lump formation.

  • Heat this mixture on low heat stirring continuously. The mixture will thicken and start leaving the sides of the kadhai/pan.

  • Turn off the flame and add fried chopped nuts cardamom powder. Mix well.

  • Garnish with nuts.

SINGHADA HALWA/SHEERA IS READY TO BE SERVED !!

SERVE HOT.

Notes -

  • This halwa needs lots of ghee! So don’t cut down on the amount of ghee. The ghee keeps the halwa moist and soft.

  • Be very careful while roasting the atta as it can get burnt. Please roast on a low flame and keep stirring continuously.

  • You can store this halwa in the refrigerator for 4-5 days. Always reheat before consuming.
