Baby Corn Fritters / Baby Corn Pakoda
(A deep-fried baby corn appetizer).
Small babies are the most beautiful things in this world, right? So how can these baby corns be an exception? Have you ever handled baby corn? They are just like small babies - soft, sweet, and delicate! Today, we are making a delicious appetiser with these little cuties! Let’s get started!

Ingredients
250g / 10-12 baby corn (बेबी कॉर्न)
1/2 cup all-purpose flour (मैदा)
3 tbsp cornflour (मक्के का आटा)
2 tbsp rice flour (चावल का आटा)
2 tbsp Kashmiri red chilli powder (कश्मीरी लाल मिर्च पाउडर)
1/2 tsp garam masala powder (गरम मसाला)
1/4 tsp turmeric powder (हल्दी पाउडर)
1/4 tsp baking soda (मीठा सोडा)
1/2 tsp sugar (चीनी)
salt as per taste (नमक स्वादानुसार)
water to make the batter (पानी)
Oil for frying (तलाने के लिए तेल )
Method
Boil water in a container and add salt. Add baby corn and heat for 5-7 mins, or pressure cook the baby corn in a small cooker (1 whistle). Drain the water and set the baby corn aside.
Add all the dry ingredients to a bowl and make a thick batter using water. Add water slowly to avoid making a batter with a thin consistency.
In a deep kadhai/pan, heat enough oil to fry the baby corn.
Dip the blanched baby corn in the batter to coat them properly.
Slowly add them to the hot oil in batches.
Fry on medium heat till they turn golden brown. Remove them on a kitchen paper towel to remove excess oil.
BABY CORN FRITTERS ARE READY TO SERVE!
SERVE HOT.
Notes -
Make a thick batter so that the baby corns are coated properly.
Serve these fritters with tomato ketchup and/or green chutney.
Fry the excess batter and relish the small batter balls!
